Purple Amaranth
Annual, easy-grown, valuable plants. Young leaves of the pre-flowering plants are used for food. Leaves and young stems of purple amaranth can be stewed, boiled, preserved or dried. Leaves contain high levels of vitamin C, iron, calcium and trace elements. Nut-flavoured seeds may also be consumed – this is a light, quickly digestible food.
